      Ingredients: 
    
            
                    1 cup fresh berries of choice (if using frozen berries, don’t add ice cubes) 2 cups Vanilla “Rice Dream” 1 cup ice cubes – ONLY IF YOU ARE USING FRESH BERRIES 1 tbs. lemon juice 1 tsp. ginger powder
        


      Directions: 
    
            
                    In a blender add all of the above ingredients and blend until smooth! Place in a dessert glass with a fun drink umbrella and straw and enjoy! Garnish with a lemon slice!

This is a fun twist on a traditional dish that is tasty and always a cool treat in the summer! We eat this after a day of swimming at the pool since it fills you up, and ties you over until dinner. You can also substitute the cucumbers for other crispy veggies like peppers or celery.
    
            
                      
              Time: 
                    1/2 hour        
        


      Ingredients: 
    
            
                    2 peeled cucumbers.4 slices of bacon1 small tomato½ cup finely chopped lettuce2 tbs. mayonnaisesalt and pepper to taste1/8 tsp. of mustard
        


      Directions: 
    
            
                    STEP ONE: Trim off the ends and scoop out the middle seeds of your cucumbers – like a “boat” so your salad can sit in it.STEP TWO: Cut up the bacon, tomato, lettuce, mayo, mustard, salt and pepper and mix together in a bowl.STEP THREE: Fill your “boats” and slice them into smaller bite sizes if you prefer.

This is the first recipe I made with my Kitchen Kids! We put this lasagna together assembly-line style and we had a blast making, eating, and even cleaning it up because we worked as a team!
    
            
                      
              Time: 
                    1 hour        
        


      Ingredients: 
    
            
                    1 pound ground turkey1 medium onion finely chopped3 chopped tomatoes½ cup finely chopped cilantro2 cups shredded cheddar cheese1 package of taco seasoning2 cans of enchilada sauce6 corn or flour tortillas
        


      Directions: 
    
            
                    Heat oven to 375 degrees. Then, in 1 tbs. olive oil, fry ½ finely chopped onion with the ground turkey. When it’s brown, add taco seasoning.Separate the cheese, onion, and tomato in three different bowls. Assign your kids a job starting with spreading some enchilada sauce on the bottom of the 9” x 12” baking dish, then adding the ingredients in this order: sauce, tortillas, meat, onion, tomatoes, cilantro, and cheese. Then, keep layering it until the dish is full.Top the lasagna with the 2nd can of red sauce and a lot of cheese. Then, bake in the oven for 30 minutes or until golden brown! Add a little sour cream on top and enjoy the scrumptious meal!!*We also love to listen to music that reflects the culture of the cuisine we are making that night.                     3-4 Celery Sticks1½ cups of Shredded Carrots¼ cup of Brown SugarSunButter® (a delicious peanut and tree-nut free peanut butter replacement!)Ziplock Plastic Bags
        


      Directions: 
    
            
                    Place a few large spoonfuls of SunButter® into the Ziplock bag and seal (you may need a bit more, depending on how much you use). This will be turned into a make-shift pastry bag by cutting a small corner off of the baggie, which will make it easy for your Kitchen Kids to spread it onto the celery sticks!Have your Kitchen Kids mix the carrots and the brown sugar in a large mixing bowl with a wooden spoon.                     Two cups of homemade chili or one 16 oz. can of pre-made chili1 cup cornmeal½ cup flourone egg (Energy egg substitute)1 tsp. salt¼ cup vegetable oil2 cups shredded sharp cheddar cheese½ red bell pepper sliced, a few olives and parsley for garnish12 cupcake/muffin pan
        


      Directions: 
    
            
                    Preheat the oven to 325 degrees. Mix the cornmeal, flour, egg, oil and salt together to create the cornbread crustPour the mixture halfway into each muffin cup. Bake the cornbread for 15 minutes.Take out the cornbread crust and add the chili and top it off with the cheese. Sam “the flash” is our wonderful dog who is the guest of honor for today’s feast. We are making dog biscuits for the birthday mutt!
    
            
                      
              Time:

      Ingredients: 
    
            
                    ¼ cup of bacon drippings 1 tbs. margarine ½ cup of condensed milk ½ tsp. salt 1 egg 3 cups whole wheat flour or millet flour
        


      Directions: 
    
            
                    Melt the bacon drippings and margarine in the hot water and then mix all of the ingredients in a large bowl saving the flour for last.Have the kids pat and roll out the mixture and using a dog bone cookie cutter, cut out the biscuits. You can use any shape for the cookies! Place the biscuits on a baking sheet and bake in the oven at 325 degrees for almost an hour (flip them over after 30 minutes.)       Ingredients: 
    
            
                    2 lbs. ground sirloin (or ground turkey)1 sleeve crushed saltine crackers1 egg (we use Energy egg replacer which has NO egg in it at all – it’s a potato starch that holds the meat together)½ cup fresh chopped parsley½ cup chopped onion1 clove garlic finely minced½ cup parmesan cheese1-1 ½ cup seasoned bread crumbs¼ cup barbeque sauce¼ cup catsup or tomato sauceSalt, pepper, and hot pepper flakes (optional)
        


      Directions: 
    
            
                    Mix all ingredients together in a big bowl. Kids can help with adding the ingredients and mixing it up with their hands (gloved) and then one of them can place it in a baking dish. An adult can set the oven for 275 degrees and bake it slowly for 1-1 ½ hours. Creating a beautiful and delicious salad is one of our favorite activities since you can put anything and everything in them – including flowers! Yes, flowers are not only beautiful, but tasty as well. You’d be surprised how many flowers are edible. We like to use summer flowers that are in bloom. Nasturtiums are peppery and colorful and zucchini flowers are hearty for this lovely dish fit for any princess!
    
            
                      
              Time: 
                    Half an hour        
        


      Ingredients: 
    
            
                    4 cups mixed lettuce leaves2 cups of fresh edible nasturtium, calendula, and geranium petals along with some zucchini flowers. Make sure they are edible and not from a florist! You can grow them in your garden like we do, or buy them at a farmer’s market.2 tablespoons extra virgin olive oil¼ cup white wine vinegar1 tbs. honey1 tsp. garlic powder1 tsp. chopped parsley3 fresh basil leaves chopped upSalt and pepperRoasted sunflower seeds!
        


      Directions: 
    
            
                    The flowers should be fresh, unblemished and unsprayed. Gently rinse them, and avoid washing them if possible, as the petals bruise easily. Check in the long horn at the back for insects and pick off the stems.Mix the flowers with the lettuce leaves.Shake the dressing ingredients together and drizzle over the salad just before serving. Top with sunflower seeds!*This is a perfect salad for your little princess. It’s great for a birthday or tea party. Your little princess can also help you decorate the table with freshly picked flowers.                      Bananas, strawberries, grapes, kiwi, cantaloupe, watermelon etc. Plastic or wooden sticks for kabobs

Thanks to our Kitchen Kids’ great Grandma Nora, we’re able to create not only a delicious meal together, but enjoy the special memories we have of our loved ones as well. This ravioli has been made every year during the holidays for generations. The preparation needs to take place ONE DAY before you plan on eating them! We hope your family will enjoy making this delicious meal - along with some wonderful memories! This recipe will make enough ravioli for a group of 8-10 people. It usually yields about 4-5 dozen ravioli depending on how small you make them. The ravioli will double in size so be sure to make them about 1½”x1½”.

      Ingredients: 
    
            
                    For the dough:5 cups semolina flour (GARBANZO BEAN flour for gluten allergies) 2 eggs (ENERGIE egg substitute) 2 cups water 1 tsp. saltFor the filling:30 oz. ricotta cheese 1 cup freshly grated parmesan cheese 1 egg (ENERGIE egg substitute) ¼ cup finely chopped parsley Some salt and pepper to taste *If you have a dairy allergy, obviously avoid a cheese filling. You may refer to our MONSTER MEATBALL recipe for a meat filling (minus the cheese) or the SPAGHETTI SQUASH LASAGNA and use a squash filling.        
        


      Directions: 
    
            
                    In a large mixing bowl, your kids will help measure and mix all of the ingredients for the dough. They should have very clean hands or use plastic gloves for this. Continue to knead the dough (for ten minutes) adding flour as needed!In another mixing bowl, another kitchen kid will help mix all of the ingredients for the filling. Then, pour the filling into a large (quart sized) baggie. Snip a small hole at the end of the bag to create a disposable pastry bag.Once the dough is complete, roll out the dough in thin strips. Have one of your kids dot about 1 tbs. of the filling for each ravioli. Be sure to use one side of the strip, and then fold over the other side. Have an adult cut the ravioli into squares. A pizza cutter works well for this step.Be sure to seal each side of the square and using the pronged edge of a fork, decorate the edges. As a finishing touch – give the ravioli a bellybutton and place the ravioli on a linen cloth or a piece of parchment paper.The ravioli need to dry out for about 12 hours. After the sixth hour, turn them over so both sides are nice and dry. You may freeze them for a later date, or use them for the next day’s dinner. Boil the ravioli in a large pot of salted water for 2 – 3 HOURS.       Ingredients: 
    
            
                    2 ½ cups of flour½ cup of sugarlots of love1 tsp. salt¼ cup melted butter1 tbs. cinnamon2 hugs2 tbs. very, very, very cold water1 tsp. Corn starch6 granny apples2/3 cup and 2 tbs. butter flavored Criscohigh fives1 dozen cupcake pan
        


      Directions: 
    
            
                    Begin by making the crust for the tarts:Have your kids add 2 cups flour, 2/3 cup and 2 tbs. butter flavored Crisco, 1 tbs. salt, and 2 tbs. water together. Have kids measure the ingredients and mix them all together in a big bowl using a fork! It’s fun, messy, and best of all – easy!Once your kids are done mixing, have them roll the dough into a ball and put in the fridge for about an hour. In the meantime…Mixture:Kids can core apples and slice them up (using a safety apple coring tool), put them in a bowl with ½ cup sugar, and 1 tbs. corn starch.Crumb topping:Kids will also measure out the rest of the sugar, flour, and melted butter and mix together.Now for the final step – Kids will fill the cupcake pans with the crust then the apple filling topping it off with a sprinkle of the topping and Voila!Bake the tarts at 400 degrees or until golden crispy and brown. Serve with a scoop of ice cream and enjoy the deliciousness of your work! Before making these meatballs your kids will need to have very clean hands – I sometimes give them plastic disposable gloves to wear while forming the meatballs. Also, make sure all your ingredients are ready for your kids to mix them up themselves.You may also serve these meatballs as a snack along with your kids’ favorite sauce for dipping!

      Ingredients: 
    
            
                    One pound of “squiggly meat” a.k.a. – ground turkey! ½ cup parmesan cheese ½ cup Italian bread crumbs one small finely chopped onion a handful of fresh flat-leaf Italian parsley finely chopped salt and pepper to taste one clove of minced garlic a few fresh basil leaves finely chopped one egg **If your kids have egg allergies, substitute the egg for two pieces of Italian bread soaked in water. Then squeeze the water out of the bread and break into small pieces. This will help hold the meatballs together just like an egg. Trust me they are just as delicious! Baking the meatballs will also help keep them together nicely.        
        


      Directions: 
    
            
                    Pre-heat the oven to 325 degrees.Combine all the ingredients together in a large bowl. Form the meatballs into MONSTER BALLS and place them on a baking sheet. Baking them makes them less fatty and crispy.Bake the meatballs at 325 degrees until they are brown and crispy! You can turn them over occasionally, but it’s not necessary!Enjoy with spaghetti or your favorite pasta! It’s best to prepare this meal a day before you enjoy it since the flavor needs time to marinate for both the salsa and the roast. Your kids can help mix the marinade and the stuffing. They can also tie up the roast and then help make the salsa while the pork roast marinates overnight. We also like to make tamales as a side dish which is very simple. The recipes for the salsa and tamales are on the next page! This is such a colorful and delicious recipe – perfect for the summer season!!!

      Ingredients: 
    
            
                    Marinade:3lb pork roast passion fruit juice 7 Up or Sprite ¼ cup Worchester sauce 3 tbs. lemon juice 3 tbs. lime juice 2 tbs. lemon and lime zest ¼ cup molasses ¼ cup brown sugarStuffing:½ cup chopped cilantro salt and pepper ¼ cup dried cranberries 2-3 cloves sliced garlic
        


      Directions: 
    
            
                    Marinate the pork overnight for the best results, but 2-3 hours will suffice. Preheat the oven to 275 degrees. Slice the roast in half lengthwise and fill it with your stuffing. Tie the roast up with cooking string/rope and place in a cooking dish. Baste the roast from time to time until it’s nice and brown and crispy. This recipe is my combination of manicotti and eggplant parmesan. It’s fun to make and kids can help. It can be substituted with chicken and zucchini too.
    
            
                      
              Time: 
                    One Hour        
        


      Ingredients: 
    
            
                    2 Large Eggplants or 3-4 long (Chinese eggplants) 2 eggs (Energy egg replacer) 1 cup of Italian seasoned bread crumbs Olive oil 1 cup shredded mozzarella 1 cup shredded parmesan 1 cup ricotta Flat-leaf Italian parsley Salt and pepper
        


      Directions: 
    
            
                    Slice the eggplant lengthwise into long pieces. Heat your skillet (medium heat) and heat up 2-3 tbs. of olive oil. Dip the eggplant into the egg replacer and then into the bread crumbs and fry up in the oil. In another bowl, add the three cheeses, finely chopped parsley and salt and pepper. Cool the eggplant once they are all fried up! Have the kids place the cheese mixture in the middle of the eggplant and then roll them up into rolls and then they can hold them together with a toothpick. They can place the roly polys on a baking dish and then mom or dad can put them in the oven to bake for 30 minutes at 325 degrees. Serve with spaghetti sauce and pasta of choice!* If your kids don’t like eggplant, then substitute it with zucchini or even chicken strips. This cake is so good you will NEVER believe that it doesn’t include three of the major food allergens: eggs, nuts, or gluten!! We make this cake for special events and it’s a HUGE hit! We really love it because kids won’t have to feel left out at parties due to their allergies!

      Ingredients: 
    
            
                    A.3 cups sifted gluten-free All Purpose flour2 cups of sugar2 teaspoons baking soda1 teaspoon salt1/2 cup cocoaB.2 tbs. vinegar1 cup vegetable oil2 tsp. vanilla
        


      Directions: 
    
            
                    CakeSTEP ONE: In a large bowl, mix together all ingredients from group A.STEP TWO: In another small bowl, blend the ingredients from group B.STEP THREE: Slowly mix all of the above ingredients together with 2 cups of water and do not use a beater.STEP FOUR: Bake at 350 degrees for 30-35 min. in a 9 x 13 in. greased pan.FrostingCream together: 1 cup of rice milk with 1 package of instant chocolate pudding and then add 1 tub of cool whip.
