Berrilicious Smoothies

These cold tasty treats will help everyone keep cool on those hot Summer days.

Time: 
20 minutes
Ingredients: 
  • 1 cup fresh berries of choice (if using frozen berries, don’t add ice cubes) 
  • 2 cups Vanilla “Rice Dream” 
  • 1 cup ice cubes – ONLY IF YOU ARE USING FRESH BERRIES 
  • 1 tbs. lemon juice 
  • 1 tsp. ginger powder
Directions: 

In a blender add all of the above ingredients and blend until smooth! Place in a dessert glass with a fun drink umbrella and straw and enjoy! Garnish with a lemon slice!

BLT “Boats”

This is a fun twist on a traditional dish that is tasty and always a cool treat in the summer!

We eat this after a day of swimming at the pool since it fills you up, and ties you over until dinner. You can also substitute the cucumbers for other crispy veggies like peppers or celery.

Time: 
1/2 hour
Ingredients: 
  • 2 peeled cucumbers.
  • 4 slices of bacon
  • 1 small tomato
  • ½ cup finely chopped lettuce
  • 2 tbs. mayonnaise
  • salt and pepper to taste
  • 1/8 tsp. of mustard
Directions: 

STEP ONE: Trim off the ends and scoop out the middle seeds of your cucumbers – like a “boat” so your salad can sit in it.

STEP TWO: Cut up the bacon, tomato, lettuce, mayo, mustard, salt and pepper and mix together in a bowl.

STEP THREE: Fill your “boats” and slice them into smaller bite sizes if you prefer.
