Passionate Pork Roast

It’s best to prepare this meal a day before you enjoy it since the flavor needs time to marinate for both the salsa and the roast. Your kids can help mix the marinade and the stuffing. They can also tie up the roast and then help make the salsa while the pork roast marinates overnight. We also like to make tamales as a side dish which is very simple. The recipes for the salsa and tamales are on the next page! This is such a colorful and delicious recipe – perfect for the summer season!!!

Ingredients: 

Marinade:

  • 3lb pork roast 
  • passion fruit juice 
  • 7 Up or Sprite 
  • ¼ cup Worchester sauce 
  • 3 tbs. lemon juice 
  • 3 tbs. lime juice 
  • 2 tbs. lemon and lime zest 
  • ¼ cup molasses 
  • ¼ cup brown sugar

Stuffing:

  • ½ cup chopped cilantro 
  • salt and pepper 
  • ¼ cup dried cranberries 
  • 2-3 cloves sliced garlic
Directions: 
  1. Marinate the pork overnight for the best results, but 2-3 hours will suffice. 
  2. Preheat the oven to 275 degrees. Slice the roast in half lengthwise and fill it with your stuffing. Tie the roast up with cooking string/rope and place in a cooking dish. 
  3. Baste the roast from time to time until it’s nice and brown and crispy. You’ll want to roast it about 1 ½ hours or 30 minutes for each pound. 

Serve with passion fruit and mango salsa and fresh corn tamales!

Assembly Line Mexican Lasagna

This is the first recipe I made with my Kitchen Kids! We put this lasagna together assembly-line style and we had a blast making, eating, and even cleaning it up because we worked as a team!

Ingredients: 
  • 1 pound ground turkey
  • 1 medium onion finely chopped
  • 3 chopped tomatoes
  • ½ cup finely chopped cilantro
  • 2 cups shredded cheddar cheese
  • 1 package of taco seasoning
  • 2 cans of enchilada sauce
  • 6 corn or flour tortillas
Directions: 
  1. Heat oven to 375 degrees. Then, in 1 tbs. olive oil, fry ½ finely chopped onion with the ground turkey. When it’s brown, add taco seasoning.
  2. Separate the cheese, onion, and tomato in three different bowls. Assign your kids a job starting with spreading some enchilada sauce on the bottom of the 9” x 12” baking dish, then adding the ingredients in this order: sauce, tortillas, meat, onion, tomatoes, cilantro, and cheese. Then, keep layering it until the dish is full.
  3. Top the lasagna with the 2nd can of red sauce and a lot of cheese. Then, bake in the oven for 30 minutes or until golden brown! Add a little sour cream on top and enjoy the scrumptious meal!!
